Almond Scented Macaroons Recipe
- 3 egg whites, brought to room temperature
- pinch salt
- 1 tsp. almond extract
- 1 cup sugar
- 3 cups grated coconut
Heat oven to 325 degrees. Beat egg whites with an electric mixer until peaks form. Add salt, almond extract and sugar slowly, until mixture shows well formed peaks. Fold in coconut. Drop in 2 inch wide dollops onto greased cookie sheet. Bake for 20 minutes, or until lightly golden.
