Chocolate Pie Recipe





  • 1 1/4 cups sugar
  • 1/4 cup cornstarch
  • pinch salt
  • 3 cups milk
  • 2 oz unsweetened chocolate
  • 4 eggs, separated
  • 2 tbsp. butter
  • 2 tsp. vanilla




  • 2 egg whites, plus the 4 egg whites previously reserved
  • pinch salt
  • 6 tbsp. sugar


Combine sugar, cornstarch, salt, milk and chocolate in a saucepan. Heat, stirring constantly, until mixture thickens, and appears to have a smooth chocolate color. Remove from heat.

In a separate bowl, beat egg yolks with an electric hand mixer. Add in hot chocolate mixture one spoonful at a time while still using the hand mixer, until you have added in about 1 cup. Turn off hand mixer, then add egg mixture back into saucepan. Cook for another two minutes, stirring to combine well. Add in butter and vanilla. When butter is completely melted, pour chocolate mixture into prepared pie shell. Chill until firm.

Heat oven to 350 degrees. Whip egg whites and salt in mixer at top speed until frothy, then add in sugar, one spoonful at a time. When the egg whites are very stiff, pour on top of chocolate pie, sealing edges. Bake in oven for about 12 minutes, until the meringue is golden.
