Guisado De Pollo - Chicken Stew Recipe

Guisado de Pollo Recipe
(Chicken Stew)

 

This dish in English would be called "Chicken Stew", but much is lost in translation. This guisado is tangy and light, but still a nice comfort food. And, for those dieting, it is very low in fat. In fact, you can cut the oil in the sauce down to a mist of vegetable spray so nothing sticks to your cooking pan. Also, rub the cooked chicken between your fingers so that you get a finely shredded chicken.

 

Ingredients

 

Chicken:

  • 1 whole chicken, about 3 lbs
  • 1 onion, quartered
  • 1-2 tomatoes, quartered
  • 2 whole serrano chilies
  • 2 clove garlic, peeled
  • salt to taste

 

Sauce:

  • water
  • 1 lb fresh tomatoes, or 1 14oz can whole tomatoes
  • 1 onion, finely chopped
  • 2 tbsp. oil
  • 2 cloves garlic
  • pinch ground comino
  • 2 serrano chilies
  • salt

 

Boil chicken with onion, tomatoes, chilies, garlic and salt. Remove chicken from broth; reserve broth for another meal.

When chicken is cool, separate the meat from the bones and skin. Discard bones and skin. Shred chicken finely by rubbing pieces between fingers to separate fibers. Set aside.

For the sauce, combine garlic and tomatoes in a blender. Add just enough water to facilitate blending, then puree. In a skillet, add oil, and sauté onions, until translucent. Add pureed tomatoes, comino and chilies, and allow to simmer of about 5 minutes. Add chicken, and simmer for 20 minutes, or until liquid is reduced. Salt to taste.
