After roasting your corn, top it with mayo, add a pinch of grated parmesan cheese along with some zesty chili power, and a hint of lemon juice. It makes the perfect supplement to many Latin American dishes!

I am a huge fan of authentic Mexican Rice! It just adds a traditional touch to the entire meal. This side dish-absolutely impeccable for a Memorial Day weekend BBQ!
