Mild Green Sauce Recipe
- 1 onion, sliced
- 1 1/2 lbs fresh tomatillos, or one 28oz can prepared whole tomatillos
- 1 clove garlic
- 2 whole serrano chilies (optional)
- salt to taste
If using fresh tomatillos, husk and wash them, then place the tomatillos in a saucepan, covering them with water. Bring water to boil, and allow to simmer for about 10 minutes, or until tomatillos turn from bright green to a dull olive color. Drain water, and set aside.
If using canned tomatillos, drain water, then set aside.
Place tomatillos with garlic in a blender and puree. Set aside. In a clean skillet, fry the onion in a bit of oil. Add in tomatillo puree, and whole chilies. Salt to taste, and allow to simmer for 10 minutes, until slightly reduced.
