Molletes are a traditional Mexican snack, that go well with simple meals.
- 3 French bread rolls
- 1 cup refried beans
- 1 cup grated white cheese, such as Monterrey Jack or asadero
How to Make Molletes
Heat the broiler in your oven. Cut the rolls in half lengthwise. Spread the butter, and toast under the broiler until golden. Remove from oven, and cool slightly. Spread with the refried beans, then sprinkle with the grated cheese. Return to the broiler to melt the cheese. Serve hot.
