Peach Brandy Recipe

 

  • 15 peaches, not over ripe, nor under ripe
  • 1 liter brandy
  • 1 1/2 cups sugar

 

Wash the peaches well, rubbing the skin to remove the fuzz. Place in a large glass or ceramic container, and pour brandy in. Cover tightly, and allow to macerate for ten days. After ten days, remove cover, and add sugar. Cover tightly again, and allow to age for 60 more days. Stir occasionally.

At the end of 60 days, remove peaches, and filter liquor through a coffee filter, to remove any dregs. Store in an old wine bottle or a decorative glass bottle in a cool, dark cabinet.
