Sopa de Fideo Recipe


Sopa de Fideo
 (Stewed Vermicelli Noodles)

 

  • 1 pkg fideo (vermicelli noodles)

  • 3 tbsp. corn oil

  • 1 medium onion, chopped

  • 2 cups chicken broth

  • 1 14oz can tomato puree
 or 2 fresh tomatoes, puree in a blender

  • 1 clove garlic, minced

  • 1 serrano chile, optional

  • pinch ground comino
  • 1 potato, cubed (optional)

  • cooked leftover meat, cubed (optional)



 

Brown fideo in oil along with onion. When the fideo is golden brown (not burnt), add remaining ingredients. Let simmer about 30 minutes. (If adding potato, make sure it is easily pierced with a fork.) Add more chicken broth if fideo reduces to the point of scorching. 
Serve hot.

 Serves 4 to 6. Enjoy!!
