Strawberry Pie Recipe

  • 9" pre-baked pie shell
  • 2 lbs fresh strawberries, about 6 cups
  • 1 cup water
  • 1/3 cup cornstarch
  • 3/4 cup sugar
  • juice of 1/2 lemon
  • whipped cream
  • lime zest

Wash and hull the strawberries, setting aside one cup of the fruit. Place the one cup of berries in a saucepan with 1 cup of water. Boil the fruit for a few minutes, until soft. Mash cooked fruit with a potato masher. Pour liquid through a strainer, reserving the liquid. Discard the fruit, and cool strawberry juice completely. Return the cooled liquid to the saucepan. Sift in the cornstarch. Cook over a low flame until the mixture is clear and thick. Remove from heat. Add in sugar and lemon juice. Cool completely.

Pour 1/3 cup of the cooled glaze over the bottom of the pie shell. Arrange remaining fresh strawberries in the pie shell, slicing larger berries to make bite-sized. Pour remaining strawberry glaze over the top. Chill until ready to serve. Serve garnished with whipped cream and lime zest.
