Whole Wheat Banana Nut Whoopie Pie Recipe

These Whoopie Pies are pretty sensational, and the healthy touch of whole wheat give them a nutty flavor and texture. YUM-O!


Whole Wheat Banana Nut Whoopie Pies

 

Filling:

  • ¼ cup flour
  • ¾ cup milk
  • ¾ cup butter
  • Pinch salt
  • 1 tsp vanilla
  • 1 ½ cup powdered sugar

 

Pies:

  • 4 cups whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 cup buttermilk
  • 4 tbls butter, softened
  • 2 tbls vegetable oil
  • 1 cup brown sugar
  • 1 ½ cup mashed ripe banana
  • 2 eggs
  • 2 tsp vanilla
  • 1 cup chopped pecans

To make the filling: Whisk together the flour and milk in a 1 quart saucepan, and bring to a simmer over medium heat. Once the mixture is very thick and stiff, remove from the heat and stir in the butter. When the butter has melted, add the vanilla and powdered sugar, and whisk until smooth. Chill to thicken.

To make the pies: In a large mixing bowl, combine the flour, baking powder, baking soda, cinnamon, and nutmeg. Set aside. Heat your oven to 375°.

In a separate bowl, use an electric mixer to combine the buttermilk, butter, vegetable oil, brown sugar, banana, eggs, and vanilla, beating until smooth. Add the dry ingredients ½ cup at a time until all is incorporated. Stir in the pecans.

Place a sheet of aluminum foil on a cookie sheet. Using a ¼ cup measuring cup as a scoop, ladle the batter out onto the foil. Make sure that you space the batter scoops at least 2 ½” apart, and that the edges of your scooped batter are as round as possible. Bake the pies for 10-12 minutes, until they are slightly golden. Remove the pies from the oven, allow to cool for 2-3 minutes, then peel from the foil, and cool completely on wire racks.

Once the pies are completely cool, place 1 tbls of the filling on the flat side of a pie, and then top with another pie of a similar size and shape. Make sure that the curved side of the pie is towards the outside.

Makes 12 whoopie pies
